Zucchini & Mushroom Saute

Zucchini & Mushroom Saute

2 tsp. extra-virgin olive oil
2 small zucchini, julienned
1 ½ cup sliced mushrooms
2 tsp. chopped fresh basil
Freshly ground black pepper to taste

Heat oil in a large non-stick skillet over high heat.  Add zucchini and cook, stirring, for 2 minutes.  Add mushrooms and basil and cook, stirring, until softened, about 1 minute.  Season with pepper.
